貓將壽司

本案的起點是一場悠長的思考，「現代日式餐飲空間應該是什麼樣子？」我們希望跳脫傳統和風符號，以當代的設計語彙，述說一種貼合都會脈動的商業空間故事。打造位於台北市信義區的全新品牌〈貓將壽司〉。

入口以鋁製波浪板建立立面韻律，門面中段做出上升波形設計，讓店外客人能夠一窺店內熱鬧的氛圍。木皮則負責穩住水平視覺，讓立面保持明亮、溫潤且可辨識。燈光設計讓硬質材質呈現出柔和、細膩的表情。品牌識別符號以高霧度光材鑲嵌於量體上，使其鮮明醒目但不突兀。

進入室內後，動線和目光自然地流向板前吧台。此區作為餐廳的結構核心：木構桁架、和紙燈籠搭配一貫入魂的職人身影，宛如一幅結合設計與技藝的極上浮世繪。在板前師傅的背後，牆面以霧面金屬板承載品牌插畫，演繹貓將大廚「諭吉」的日常——捏壽司、抓魚、送餐等，輕盈地讓品牌 IP 融入空間、增添趣味。

座席區以木作矩形延續材質的一致性，以霧面金屬收邊增添層次和豐富度。思考讓顧客在用餐時能保有充分的隱私並感覺舒心，避免以過重的隔屏介入造成壓迫感，選擇結合透光壓花屏風的卡座沙發。

順應建築條件，靠窗包廂區的天花弧面木皮設計，與建物體的室外弧度連續，將城市景觀也融進空間裡。一天當中日光的位移，以多元的表情為空間演奏不同氛圍。

〈貓將壽司〉以當代手法詮釋日料職人精準、明快、富有細節的精神，亦揉合品牌特有的「貓將魅力」。我們相信好的商業空間，是經由一連串對於需求、機能、美感的精細設計而來；而品牌印象，在透過顧客實際的體驗後確實地建立起。讓餐飲空間在高強度的使用下，仍能長期運作，歷久彌新。

The project began with a fundamental question: What should a modern Japanese dining space look like today?

Rather than relying on conventional “wa-style” motifs, we sought to reinterpret the genre through a contemporary design language—one that resonates with the rhythm of the city. This became the guiding premise for the new brand MEOW CHAN SUSHI, located in Taipei’s Xinyi District.

The exterior establishes its visual cadence with aluminum wave panels, accented by an ascending central curvature that opens a framed glimpse into the restaurant’s lively interior. Warm wood veneer anchors the horizontal sightline, giving the façade clarity, softness, and recognizability. A calibrated lighting scheme renders the hard materials with gentler nuances, while the brand signage—crafted in a high-opacity luminous finish—stands out distinctly without overwhelming the composition.

Inside, circulation naturally leads toward the sushi counter—the structural and experiential heart of the restaurant. A timber truss ceiling paired with rows of washi lanterns frames the chefs’ movements, forming a vivid tableau where design and craftsmanship converge. Behind the counter, matte metal panels feature brand illustrations depicting “Yukichi,” the house feline chef, in daily scenes of molding sushi, catching fish, and serving guests—lightly infusing the brand’s personality into the space.

The dining area maintains material coherence through rectilinear woodwork, refined with matte metal trims for added depth. To preserve guest privacy without introducing visual heaviness, banquette seating is paired with semi-transparent embossed glass screens—softening boundaries while retaining openness and comfort.

Responding to the building’s geometry, the private window-side booths adopt a curved wood-clad ceiling that continues the arc of the exterior structure, integrating the urban skyline into the interior experience. Throughout the day, shifting daylight animates the surfaces, offering ever-changing atmospheres.

MEOW CHAN SUSHI interprets the precision, clarity, and detail-driven ethos of sushi craftsmanship through a contemporary spatial vocabulary, while subtly weaving in the brand’s distinctive “meow-chan charm.” We believe that a successful commercial space is shaped by a sequence of precise decisions—balancing need, function, and aesthetics—and that brand identity is ultimately solidified through lived experience. Here, the space is designed to endure high-intensity use, operate consistently, and remain engaging over time.
